Pineapple Bars

These bars are so soft, sweet and gooey and the pineapple makes me feel like I’m on a tropical vacation.

If you’re a pineapple lover, this is the cake for you. Freshly crushed pineapple inside the bar is to die for! It’s fast, easy, one-bowl, no mixer, from-scratch recipe that’s as easy as using a boxed mix.

I’m not a huge fan of sweets but when I crave them I can eat it all day long! I woke up Saturday morning craving for these pineapple bars. I couldn’t get them out of my mind. Rich, sweet and gooey and full of pineapple flavor. I knew I had to make them or they’d haunt me until I did. I came across this recipe on Pinterest long time back & I just knew that it would be a big hit as hubby & me both love Pineapple. It’s become one of our family favorites & you are going to love it too. Simple, easy & yummy!

You know when you make a dessert and you just want to eat it all the time? That’s what happens when you make these pineapple bars. They are so soft and moist. It literally melts in your mouth.

The original recipe actually called for canned crushed pineapples. But I decided to make it with fresh pineapple. I don’t like using canned or frozen fruits because in canning process lot of vitamins are destroyed & syrup adds lot of empty sugar calories. So why not use fresh fruits when they are in season.

I chopped pineapples in 1 inch pieces & crushed the pieces in a food processor for 30 seconds & squeezed out all the juice and use them in the recipe.

Here’s how you can make it too:

Ingredients:

  • 1/2 cup butter (1 stick), softened
  • 2/3 cup sugar
  • 2 eggs
  • 3/4 cup flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/4 cup crushed pineapple, well drained
  • garnish: powdered sugar

    Method:

  • Pre-heat oven at 350 degrees F
  • In a large bowl , whip together the butter, sugar and eggs.
  • Add in half of the flour , baking soda and salt. Mix.
  • Add in other half of the flour. Mix
  • Stir or gently mix in pineapple.
  • Spread into a greased 8×8 or 9×9 square pan.
  • Bake at 350 degrees F for 30-33 minutes until done. Allow to cool in the pan for 15 minutes.
  • Sprinkle with powdered sugar and cut into squares. Serve.

It tastes the best when it’s warm and it’s so flavorful that you don’t even need any whipped cream on top, at least I didn’t.

  • 1 1/4 cup crushed pineapple, well drained
